Apple sauce
250 g
Brown sugar

Soya drink
120 ml
Gluten free oats
300 g
Corn starch

Gluten free baking powder
1 teaspoon
Baking soda
1 teaspoon
Carrot (peeled and grated)
180 g
Ground cinnamon
1 teaspoon
Pinch of salt
Squeeze of lemon juice
Raisins
60 g
Icing
Soy yoghurt alternative
50 g
Vegan cream cheese alternative
150 g
Sugar

Step by step

Base of the cake:

  1. Preheat oven to 180ºC (top and bottom heating)
  2. Add apple juice, brown sugar, soy drink and a drop of lemon juice to the bowl. Mix well.
  3. Add oatmeal, cornstarch, baking powder, baking soda, cinnamon and salt. Mix everything very well.
  4. Add the grated carrots, raisins and stir until everything comes together.
  5. Coat a 22 cm mold with a thin layer of olive oil and wrap with baking paper. Add the dough and level it with a spoon.
  6. Bake the cake for 30-35 minutes.
  7. Allow the cake to cool and carefully unpack it.

On topping:

  1. In a bowl, mix soy yogurt with cream cheese and sugar until everything is well combined.
  2.  Crush the cookies with your hands.
  3. Add yogurt icing to the top of the cake and sprinkle the crushed biscuits on top.
